This page under development. Cool season vegetables in Georgia are planted and grow best when air and soil temperatures are chilly. Most of these can tolerate frost and some (such as kale and collards) even improve in flavor after frost. Some, such as onions, kale, and carrots, can be planted in the fall to overwinter and be harvested in the spring. Others--such as green peas, lettuce, broccoli, and cabbage--are planted in mid to late winter for a spring harvest. For specific dates and planting guidelines, consult the Vegetable Planting Chart.
