Root crops.
Root crops--including potatoes, beets, carrots, and onions--will last for weeks or even months if kept in a dark, cool place. Traditionally, before the advent of air conditioning, that place was underground, hence the term "root cellar".
Carrots. Because of their tendency to dry out, carrots should be stored in damp sand.
Some vegetables need to be cured (air-dried in warm location protected from direct sun) before storing.

- Onions (store hanging in air, in old panty hose or other porous fabric, with knots between onions to prevent them from touching)
- Sweet potatoes (curing causes starchy carbohydrates to turn to sugars).
